Be warned. These are not your typical pumpkin pie recipes, but they are worth it!
Toffee Apple Spiced Delight

Cinnamon, spice and all things nice! That is exactly what your tastebuds will get when you indulge in one of this easy to make delight.
Of course, Fall is the perfect season for making use of the many local apples available, and what better way to treat the senses than adding a great helping of spice to the mix?
Here’s a quick guide to getting this treat in the oven.
INGREDIENTS
For Cake | 1 cup pitted dates (chopped) 1 cup milk of your choice 1 cup butter 1 cup light brown sugar 1 tablespoon baking powder 2 1/4 cups self rising flour 1 tablespoon vanilla 4 large eggs 1 tablespoon pumpkins spice 2 large Granny Smith apples lemon juice |
For Toffee Sauce | 6 pieces of Werther’s Original Soft Caramels 1/4 cup milk (more may be needed) 1 1/2 tablespoons powdered sugar (confectioners) |
DIRECTIONS
Step 1
- Heat oven to 350 degrees.
- Line a 9 inch baking pan with parchment paper.
- Grease with butter.
Step 2
Mix dates with milk. Add the mix to a pan and simmer until a sweet aroma fills the kitchen and the dates are soft! Take off the heat and allow to cool.
Step 3
While dates are cooling, peel and slice a few tasty apples and add lemon juice to keep them fresh.
Step 4
Blend the cooled date mixture to a smooth paste then add butter, brown, baking powder, eggs, flour, vanilla, and pumpkin spice (or a choice of yummy Fall spices like ginger, nutmeg, cinnamon, clove, or allspice). Beat the date and cake mixture until light and fluffy.
Step 5
Pour into a greased tray then carefully place the apple slices on top so that they overlap.
Step 6
Bake for around 45-50 minutes until a toothpick comes out clean. Allow to cool trying to resist cutting out a big chunk for tasting!
Step 7
Finally, add a few toffees to a pan with a splash of milk. Heat and stir until melted. Quickly dust the cooled cake with powdered sugar and drizzle the toffee over the top. Allow to set.
Step 8
Now it’s time to cut into chunky delights and, of course, test the biggest one to make sure it is fit for the purpose!
Variation: Use nut milk for a non-dairy option

Falling Leaf Fancies

What better way to enjoy Fall, then homemade cookies in the shape of leaves!
These little tasty morsels look just as good as they taste and are a lot of fun to create as well. All you need is your favorite shortbread or sugar cookie recipe, a leaf cutter, powdered sugar, food coloring, and a choice of extract if you wish (we recommend almond for a feel of Fall).
These very cookies are made in the video below. These are fancy, if you are creative! Simple is good also!
Here’s how to make any type:
- Using your favorite shortbread or sugar cookie recipe cut out leaf shapes and bake them in the oven for the required amount of time. This works really well if you have a variety of different sized leaf cutters but if you only have one size don’t worry, you can jazz up the colors later!
- Once baked allow the leaves to completely cool before starting the fun stage; decoration!
- Buy an icing decorating kit or make your own. Green, red, orange and yellow food coloring will create great shades of foliage. Add almond extract for extra flavor.
- Decorate the leaves with the colored icing and use a knife to create leaf stems on each one.
- Allow to set and then arrange on a plate depicting a scene of falling leaves, a dusting of powdered sugar is nice!

Death By Chocolate Banoffee Pie

Banoffee pie is a popular British dessert and once you taste it you will know why it is so popular.
When my friend told me that “there are few people that you will meet in life that do not like banoffee pie”, I had an amazed look on my face. I thought what the heck is Banoffee pie? It is a pie traditionally made with bananas, whipped cream and toffee and is a classic English favorite dessert!
This banoffee pie recipe, however, has a special twist. Chocolate is added for a special treat. Does merging these two winners together, create a dessert that is to die for? You be the judge!
INGREDIENTS
8.5 oz (250g) chocolate digestive biscuits (chocolate covered graham crackers) |
2 bananas |
1/2 cup unsalted butter (melted) |
1.25 cups Dulce de Leche (Original recipe calls for 397 g Carnation Nestle Caramel) |
10 oz whipping cream |
Grated chocolate |
DIRECTIONS
1. Crush chocolate covered digestive biscuits in food processor or place in plastic bag and pound until you have fine crumbs! |
2. Add butter to crumbs and mix. Press into sides and bottom of a 8 inch pie pan, refrigerate, and chill for 15 minutes. |
3. Pour caramel into chilled pie shell. |
4. Layer sliced bananas over the caramel. |
5. Whip cream into medium peaks and spoon over bananas. |
6. Sprinkle chocolate shavings from candy bar over whipped cream. |
7. Chill until set (3 hours) |
