I’ll be honest. I had never heard of Scotcheroos. But when my daughter wanted me to make them, I had to search for a Scotcheroo recipe. Image my surprise when I discovered that these were just an upscale Rice Krispy Treat!
As Emeril Lagasse says ‘kick it up a notch.’ These delicious treats are more than 1 notch kicked up!
Start the diet tomorrow! Follow these easy steps to create a decadent dessert that both adults and kids will love!
PrepTime: 15 minutes + 2 hours to chill
|1 cup corn syrup (light or dark)|
|1 cup granulated sugar|
|1 cup peanut butter (creamy)|
|1 cup butterscotch chips|
|1 cup semi-sweet chocolate chips|
|6 cups Rice Krispies|
Line an 8 by 8 inch baking pan with parchment paper. Then spray with non-stick cooking spray.
In a large sauce pan, mix sugar and syrup over medium heat until the mixture comes to a rolling boil.
Stir in peanut butter and remove from heat.
In a large bowl add Rice Krispies. Stir in the peanut butter mixture.
Spread mixture evenly in the baking pan
Microwave butterscotch and chocolate chips. Depending on your microwave, heat for 1 minute and then stir.
If not melted, heat for another 30 seconds and stir. Continue this process until the chips are completely melted.
Pour melted chips over the Rice Krispies. Spread evenly.
Refrigerate for at least 2 hours or until chocolate hardens.
Remove from refrigerator and slice.
Scotcheroo Recipe Variation: For a thicker topping, double the amount of chips.
