
I’ll be honest. I had never heard of Scotcheroos. But when my daughter wanted me to make them, I had to search for a Scotcheroo recipe. Image my surprise when I discovered that these were just an upscale Rice Krispy Treat!
As Emeril Lagasse says ‘kick it up a notch.’ These delicious treats are more than 1 notch kicked up!

INGREDIENTS
1 cup corn syrup (light or dark) |
1 cup granulated sugar |
1 cup peanut butter (creamy) |
1 cup butterscotch chips |
1 cup semi-sweet chocolate chips |
6 cups Rice Krispies |
DIRECTIONS
Step 1
Line an 8 by 8 inch baking pan with parchment paper. Then spray with non-stick cooking spray.
Step 2

In a large sauce pan, mix sugar and syrup over medium heat until the mixture comes to a rolling boil.
Step 3

Stir in peanut butter and remove from heat.
Step 4

In a large bowl add Rice Krispies. Stir in the peanut butter mixture.
Step 5

Spread mixture evenly in the baking pan
Step 6

Microwave butterscotch and chocolate chips. Depending on your microwave, heat for 1 minute and then stir.
If not melted, heat for another 30 seconds and stir. Continue this process until the chips are completely melted.
Step 7

Pour melted chips over the Rice Krispies. Spread evenly.
Refrigerate for at least 2 hours or until chocolate hardens.
Step 8
Remove from refrigerator and slice.
